Making karashi-mentaiko as spicy as you like
Karashi-mentaiko, or salted cod roe seasoned with red pepper is a popular local specialty food of Fukuoka. At Haneya Sohonke, a restaurant and gift shop, you can make your own karashi-mentaiko. Under the guidance of friendly lecturers who speak with charming local accent, you add chili, kelp, yuzu citron to salted cod roe, adjust the amount of chili powder according to your taste. Then you add sake, shochu liquor, brandy or wine, and marinade to Haneya's secret recipe. Your karashi-mentaiko will be ready to eat after being left to sit in the fridge for five days.
